Note: Brewing green tea in water that is too hot will cause a bitter taste. The optimal brewing temperature for green tea is 180°F/82°C. This temperature is equivalent to a pre-boil simmer. If you choose to boil water to ensure it is free of bacteria or other impurities, it is recommended you allow the water to cool to the recommended temperature before brewing green tea.

Brew hot tea by the cup: When preparing by the cup, this tea can be used repeatedly—about 3 times. The secret is to use water that is about 180°F/82°C. Place 1 slightly teaspoon of tea leaves in your cup, let it steep for about 3 minutes and then begin enjoying a cup of enchantment—do not remove the leaves from the cup. Once the water level is low, add more water, and so on and so on, until the flavor of the tea is exhausted. Do not add milk or sugar as green tea is typically enjoyed straight-up.

Brewing hot tea by the pot: Bring freshly drawn cold water to a pre-boil simmer or boil and allow to cool to 180°F/82°C. Place 1 slightly heaping teaspoon of tea for each cup into the teapot. Pour the boiling water into the teapot. Cover and steep for 3 -7 minutes (the longer the steep, the stronger the tea). Pour into your cup. Adding milk or sugar is not recommended as green tea is normally enjoyed “straight up.”

Brewing iced tea (1 qt): Place 6 slightly heaping teaspoons of tea into teapot or heat resistant pitcher. Pour 1 ¼ cups of freshly boiled water over the tea. Steep for 5 minutes. Quarter fill a serving pitcher with cold water. Pour tea into the serving pitcher, straining the leaves. Add ice and top-off the pitcher with cold water. (A rule of thumb for preparing fresh-brewed tea is to double the hot tea since it will be poured over ice and diluted with cold water.) Some quality teas may turn cloudy when poured over ice. This is a sign of luxury quality and nothing to worry about.
